Pumpkin Dreams

If you love Pumpkin Pie, you'll LOVE these!! They are a soft cookie with a delicious caramel- like frosting... heaven :-) I found this recipe in the Taste of Home magazine and modified it myself.

1 Cup butter, softened

1/2 cup each sugar and packed brown sugar

1 egg

2 teaspoons vanilla extract

1 cup canned pumpkin (apparently I did not see this or read it correctly- I added 1 can!! Mine came out maybe a little too soft, but still yummy!)

2 cups all purpose flour

3 1/2 tsp pumpkin pie spice ( I used separate spices; cinnamon, cloves and ginger to taste.)

1 teaspoon each baking powder and baking soda

1/4 teaspoon salt

The Frosting

1/2 cup packed brown sugar

3 tablespoons butter

1/4 cup milk

1-1/2 to 2 cups powdered sugar

1) In a large bowl, cream together the butter and sugars until light and fluffy. Beat in egg, vanilla, and the pumpkin. Combine dry ingredients; gradually add to the creamed mixture and mix well.

2) Drop by rounded teaspoonfuls about 2 inches apart onto an un-greased baking sheet. Bake at 350 degrees for 12-14 mins. ( mine were perfect at 10 minutes baking time.) Place on wire racks or foil to cool.

3) For frosting, combine brown sugar and butter into a small saucepan. Bring to a boil;cook over medium heat for about 1 minute or until slightly thickened. Cool in a bowl for 10 minutes. Add milk; beat until smooth. Beat in enough powdered sugar to reach desired consistency. ( I added about 1 cup. It was a thin frosting and I dipped the cookies right in to give them a glaze!)

Makes about 4-1/2 dozen cookies

Withdrawal. . .

5 months old!
Happy 3rd Birthday Hailyn Grace!!
Tutu cute!
My Favorite toy!
Look I can sit up all by myself!!
My Three Beautiful girls!
My sweet Paisley and I.
Blowing out her candles on her 'Uniqua' cake I made for her, as per request. It took many tries for her to blow out the candles, but she got it, all on her own! We just had a small party at 'Auntie' Jennie's house. Just the kids, my sister and I. Nothing huge since Thomas was not home. We will be taking the kiddos to Sea world when he gets home and celebrate her birthday again with "Daddy!" I think she had a very Happy Birthday despite having a small party. Sometimes those are best :-)
From not having my laptop. I am a nice, decent wife who let her husband take the laptop while he is on detail away from home. Boy have I regretted it! I cannot blog as much as I would like to. I really enjoy the "venting." A lot has gone on in the past month since I have posted. Hailyn turned 3 years old, got rid of her pacifier at bedtime and is coping well with her sister starting school. She is such a big girl and oh such a handful! Did I mention hilarious!? Ayla is doing so great in school. She comes home with one heck of an attitude, but I suppose it comes with the territory. She has gotten all smiley faces every day since starting school, so I guess I cannot complain. Suppose this is why she has been acting out at home. She's gotta release the "bad" at some point in her day; Unfortunately it is released unto me. She will adjust, I hope. It has already gotten a million billion times better than it was the first couple weeks of school. So I should count my blessings, right? Our Paisley. My goodness. She just had her 5 month birthday on the 28th of September. I cannot believe it. She is scooting, almost crawling, can go from a sitting position to a crawling position and vice verse. She loves to babble. Her favorite being "Da da." She has started to throw a fit once I am out of site. Which is very sweet, but does not allow me to get much done. It tends to be when she is tired mostly, but she has been doing this more and more the past few days. I am going to have some huge arm muscles in no time at this rate. Did I mention she weighs a whopping 19 pounds? She is wearing 18 month clothes. She can still squeeze into some 12 months, but some are too small.
As for me, I am counting down the days until the husband returns. Less than two weeks!! yahoo!! I have lost 10 pounds since he left a month ago. I hope that I can continue to lose. And I hope he notices. I cannot really tell, besides the number on the scale and my clothes being a little looser. My goal is to get down to 150 eventually. That means I have 58 pounds left to lose. Little by little, right?!
My "plan" was to post several posts updating on everything that has been missed in the last month or so; but that could take ages. So I have summed it up and will continue to blog regularly, even if I have to force myself to sit in front of this turtle speed desktop of mine. :-)
In other news, Ayla has her first open house at school tomorrow afternoon. She also has a book fair! I feel so old. I can remember just like it were yesterday when I was going to the book fair and begging to get everything and anything in site! Seriously is scary how fast time goes.
Time really does fly when you are having fun! Being a Mommy is the best!!! :-)
