Flourless Cookies!?
When I first came across this recipe, I thought there was no possible way a cookie is a cookie with no flour. Boy was I wrong. These are good- and the kids love them too!! :-)
I got this recipe from Lynn's Kitchen Adventures.
Enjoy!!
Flourless Chocolate Chip Peanut Butter Cookies
-1 cup creamy peanut butter
-1/2 cup granulated sugar
-1/2 cup packed light brown sugar
-1/2 cup semisweet chocolate chips ( I used about 3/4 of a cup)
-1 large egg, beaten
-1 teaspoon vanilla extract
Combine all the ingredients in a bowl, and stir until smooth.
Take about 1 heaping tablespoon of dough and roll between your hands to form a smooth ball. Place the balls of dough on ungreased cookie sheets, spacing them 1 inch apart.
Bake the cookies at 350 until the cookies are puffed and lightly golden, about 10 minutes. Remove the baking sheets from the oven and let the cookies cool on the sheets for 4-5 minutes.(letting cool on the baking sheet first is important- I found out the hard way ;-) Although, I only let them cool for about a minute, otherwise, mine stuck ) Then remove them onto wire racks to cool.( I put mine on foil. I find that it helps them to be a little softer.

Sick and Tired....
All three of my girls are sick; Including their Mommy. This morning I woke up with their miserable cold :-( No fun!!
Paisley went down with an ear infection first, Last Tuesday. Ayla was next, yesterday. I am just waiting for Hailyn to start complaining of her ear. I am sure I will have to take her in. Whatever virus we all have is a nasty one. It is causing fever, congestion and excessive coughing! Not good! Thank Goodness that it is not the flu! I should count my blessings I suppose. I just want us all to be healthy. Hopefully soon. These pictures are from the last couple months that I have fallen behind on the Blogging world. I WILL be better, promise :-) I just need to be better about setting aside some time in my day to blog. Right now the little one is napping, and the older girls are watching Toy Story, which is making time for Mommy to blog. FinallY! Enjoy the pictures!
